Recipe: Baked eggs

As a final year student, I have the luxury of a light timetable and only have to get up before 10 once a week. This morning (on my day off) I woke up, saw the frost on the roofs outside and wanted something warm and gooey that would fill me up until the afternoon. I looked what I had in the kitchen and decided to make some baked eggs.

Baked eggs are fantastic as they are super easy, really cheap to make and taste great.

For 1 portion, you will need:
2 eggs
Half a tin of passata
2 spring onions
4 cherry tomatoes
Chilli flakes
Paprika
Half a pepper
2 sausages

Turn on the oven to 200°C. Get an ovenproof dish that suits your portion size and fill with chunks of spring onions, cherry tomatoes and peppers. Add paprika, chilli flakes and salt and pepper. Pour over enough passata to cover. Fry off your chunks of sausage or whatever you want to use (bacon, chorizo etc) as these will not cook within the baking time. You could also add cooked ham or extra veg instead. Place the chunks on top and crack the eggs over your dish, they will sit on top of the tomato sauce. Put straight into the oven for about 10 minutes or until the egg is cooked to your liking. Carefully put the hot dish onto a plate to serve and dig in with some crusty bread!

Baked eggs are also great for a sharing meal, just make more ingredients and all dip in. You could even make individual portions in separate pots. These aren’t just a breakfast meal, I would add more spices and have it for dinner!
