I don’t tend to cook food that takes more than 30 minutes to cook. I like simple, easy food and I get very hungry, so waiting around is a big no-no for me!
Something I often whip up when in a rut is this tomato tart. The best thing about it, is that you only need 3 ingredients!
- Puff pastry
- Boursin or any soft but crumbly cheese
Roll out your pastry, or even better, buy a pre-rolled sheet that comes with baking parchment (even less effort required) and score lines around the edges leaving a 1 inch border
Get your cheese and push onto the pastry with the back of a spoon. This needs to be fairly crumbly (Boursin works a treat) and not too soft (e.g. cream cheese) as it shouldn’t add any moisture. I use the garlic and herb version of Boursin as it provides a load of flavour and saves me a job.
Slice up your tomatoes and spread out over the top. Add a little salt and pepper and drizzle olive oil for a bit of flavour.
Pop in the oven for about 20 minutes on 180 degrees, or until the pastry is nice and golden!
I tend to serve this with just a bit of salad, but would be great to take to a picnic or as snacky party food, cut into smaller squares!
This recipe is super simple, so it begs to be jazzed up a bit. A bit of bacon or chorizo would be lovely, I’ve also made this with butternut squash instead of tomato, sprinkled with feta. Just remember that you should cook your toppings before adding on, especially for harder vegetables and meat.
